Silky chickpea dip blended with tahini, garlic and lemon, finished with olive oil and a dusting of cumin. Serve with warm bread or vegetables.
For an extra silky dip, slip the skins off the drained chickpeas. Optional but worth it.
Blend the chickpeas with the garlic and lemon juice until coarse.
Add the tahini and salt and blend again to a thick paste.
Loosen with iced water a spoonful at a time, blending until the hummus turns pale and fluffy.
Spread into a bowl, drizzle with olive oil and dust with cumin before serving.
