Toasted bread rubbed with raw garlic and piled with marinated tomatoes, basil and good olive oil. The simplest Italian antipasto.
Slice the baguette and toast or grill until golden and crisp on both sides.
While still warm, rub one side of each slice with a halved garlic clove.
Dice the tomatoes and toss with torn basil, olive oil, salt and pepper.
Spoon the tomato over the toasts just before serving so the bread stays crisp.
