The diner-style smash burger — balls of ground beef smashed thin on a screaming-hot griddle for a lacy browned crust, stacked with molten American cheese, pickles and burger sauce in a toasted brioche bun.
Stir together the mayonnaise, ketchup and mustard with a little finely diced pickle into a smooth pink burger sauce.
Divide the ground beef into four loose balls without packing them tight, so they smash thin and stay tender.
Butter the cut sides of the brioche buns and toast them face down on the griddle until golden.
On a screaming-hot griddle, press each beef ball flat with a firm spatula, season with salt and pepper, and cook until a deep brown crust forms. Flip once and top each with American cheese to melt.
Spread burger sauce on the buns, add shredded lettuce, thin onion and pickles, then stack the molten cheeseburger patties and close.
