Thick Greek yogurt folded with grated cucumber, garlic and dill. A cooling dip and sauce for grilled meats, vegetables or warm pita.
Coarsely grate the cucumber and salt it lightly to draw out the water.
Squeeze the grated cucumber hard in your hands or a clean cloth so the dip stays thick.
Stir the grated garlic and chopped dill through the yogurt with the olive oil and a squeeze of lemon.
Fold the drained cucumber through the yogurt and season to taste.
Chill for at least half an hour so the garlic mellows, then serve.
