A deconstructed sushi roll in a dish. Seasoned rice topped with creamy baked salmon, scooped up with sheets of nori.
Mix the warm sushi rice with the rice vinegar and press it into a baking dish.
Bake or poach the salmon, flake it, then mix with the kewpie mayo, cream cheese and sriracha.
Sprinkle furikake over the rice, then spread the creamy salmon on top.
Bake until hot and lightly golden on top.
Scatter scallion over and serve with squares of nori to scoop.
