The viral chopped salad of crunchy cabbage and cucumber in a creamy blended green herb dressing. Fresh, garlicky and light.
Finely chop the cabbage and cucumber and put them in a large bowl.
Blend the basil, parsley, chives, garlic, lemon juice, olive oil, vinegar, cashews and nutritional yeast with a pinch of salt into a smooth green dressing.
Pour the dressing over the vegetables and toss until everything is coated. Serve it straight away.
