Thick and fluffy pancakes, soft in the middle and golden outside. Stack them up and serve with sour cream and fresh berries.
Whisk the flour, baking powder, sugar and salt together, then stir in the milk, eggs, melted butter and vanilla into a thick smooth batter.
Let the batter rest for ten minutes so the pancakes turn out fluffy.
Pour small rounds into a buttered pan over medium heat and cook until bubbles form on top, then flip and cook the other side until golden.
Stack the pancakes, dust with a little powdered sugar and serve with sour cream and fresh berries.
