Soft Russian cottage cheese fritters, fried until golden outside and creamy inside. Serve them warm with sour cream and a little jam.
Mash the tvorog with the egg, sugar, vanilla and a pinch of salt until smooth. Stir in the flour and semolina, and the raisins if you like.
With floured hands, roll the dough into small balls, then flatten each one into a thick round patty.
Fry the patties in a little oil over medium heat until deep golden on both sides and cooked through.
Let them rest for a minute, then serve warm with a spoon of sour cream.
