Thin lavash folded into triangles around a filling of cottage cheese and fresh herbs, then toasted in butter until golden and crisp. A quick savory snack, good warm.
Mash the cottage cheese with the egg, chopped dill and parsley and a little salt. Crumble in the feta if you use it.
Cut the lavash into wide long strips.
Put a spoon of filling at one end of each strip and fold it over into a triangle, folding again and again to the end.
Fry the parcels in butter over medium heat until golden and crisp on both sides.
Serve warm, cut in half to show the filling.
