Chicken parmesan, crispy breaded chicken under marinara and melted mozzarella. Serves 4.
Slice the breasts in half horizontally and flatten to about 1 cm thick, then season with salt.
Coat each piece in flour, then beaten egg, then the breadcrumbs mixed with half the parmesan.
Fry in the olive oil over medium-high heat for 3-4 minutes each side, until deep golden and crisp.
Sit the chicken in a baking dish, spoon marinara over each piece and top with the mozzarella and the rest of the parmesan.
Bake at 200°C for 10-12 minutes, until the cheese is melted and bubbling. Finish with torn basil.
