Crispy strips of beef in a glossy sweet soy sauce with plenty of scallions. A takeout favourite made at home.
Slice the beef thin and toss it in the cornstarch.
Fry the beef in hot oil until the edges are crisp, then lift it out.
Cook the garlic and ginger, add the soy and brown sugar and simmer into a glossy dark sauce.
Return the beef and toss to coat, adding the scallions at the end.
Serve with white rice.
