Thin lavash folded into triangles around a filling of cottage cheese and fresh herbs, then toasted in butter until golden and crisp. A quick savory snack, good warm.
Mash the 250 g cottage cheese with the egg, chopped dill and parsley and a pinch of salt until combined. Crumble in the 60 g feta if you use it.
Cut the 200 g lavash into wide strips about 10 cm across and as long as the sheet.
Put a heaped spoon of filling at one end of each strip and fold it over into a triangle, then keep folding triangle over triangle to the end of the strip.
Melt the butter in a wide frying pan over medium heat and fry the parcels for 2 to 3 minutes per side, until golden and crisp on both sides.
Serve warm, cutting each parcel in half to show the soft filling.
